So I think I jinxed myself after bragging about how easily my meal plan ideas came to me last week because this week was a little rough.  I finally had to call in the reserves and look at my pinterest boards.  Oh how I love Pinterest!

Meal Plan

Monday~ leftover Beef Barley Soup and Baking Soda Biscuits (OMG so good!!!)

Tuesday~Hot and Creamy Chicken Sauce over Quinoa Noodles

Wednesday~Tacos and guacamole

Thursday~Stuffed Red Peppers

Friday~ Chicken Marsala over Spaghetti Squash made lovingly in the crock pot (man how I love this thing!)

Saturday~ Going out cause we deserve it after a long week

Sunday~ Chicken Tortilla Soup

Even though I had all our meals planned out and had all the food stocked up to make and even though I did make all that delicious and health food, I still managed to eat a bunch of junk.  Mainly in the form of a giant bag of peanut M&Ms.  I don’t buy junk food much but somehow this had been in the cupboard for months and they just started calling to me.  It was bad.  Every time I went into the kitchen I grabbed a handful.  I finally woke up Saturday morning and had had enough.  I opened the bag and dumped the rest of those nasty M&Ms into the garbage.  I was seriously waking up feeling hung over.  A sugar hang over.  I don’t have time for that and it’s hard enough to get out of bed in the morning when you feel good.  But I still like to have a little treat every night so I’ve decided that if I want something sugary then I need to make it myself.  So I’ll start adding that to my weekly meal plans too.  Tonight I made apple cider donuts.

I was also a bit of a slacker fitness wise.  Unhealthy eating + little exercise= a sluggish and headachey Mandi.  This week I am promising myself that I will do better.  Even if hurricane Sandy messes up my plans I have tons of equipment at home and stacks of Oxygen magazines.

Sunday~ MUD RUN!!!  (Can’t believe it’s in a week!)

I’m still a bit nervous about the mud run.  Mostly because I have no idea what to expect but I’m feeling a little bit better because they’ve moved all the start times to 10.  That means that Matt and his team will be starting the same time as us and can help us girls out.  I think it will be fun!
