Cheesy Garlic Chicken


Before I hopped on the healthy eating bandwagon Matt and I made our own meals instead of relying on fast food.  Even though we did our own cooking we still made some questionable choices.  One of our favorites involved a packet of soup mix filled with MSG and other not so great for you stabilizers and preservatives.  It was delicious!  It was one of those dinners that you could distinguish it from its smell when you walked into the house.  It was also simple and quick.  I’ve used those flavors to inspire my own version of Cheesy Garlic chicken.



This really is pretty simple to make and takes hardly any time to put together.  It’s also a whole lot healthier than my soup mix fav.

Cheesy Garlic Chicken

4 chicken breasts

1 teaspoon olive oil

small onion chopped

1/2 Cup grape tomatoes halved

1/2 teaspoon dried basil

1/8 teaspoon dried parsley

1/2 teaspoon dried oregano

1/4 teaspoon fennel seeds

salt and pepper to taste

1 clove of minced garlic

1/4 cup grated Parmesan cheese

1/4 cup mozzarella


Pre-heat oven to 350°.  In a small bowl combine chopped onion, halved tomatoes, olive oil, basil, parsley, oregano, fennel seeds, garlic and Parmesan cheese.  Place chicken in an 8×8 baking dish and cover with tomato mixture.


Bake uncovered for 25 minutes.  Remove from oven and sprinkle with Mozzarella cheese.  Return to oven and cook for an additional 5 minutes or until cheese is melted.  Then enjoy!


Just add some vegetables and maybe a side of whole wheat pasta and you have yourself a tasty and quick dinner.  I hope you guys enjoy this make-over meal as much as we do!
